Our recipe for sweet snowballs

Whether it’s winter or summer, we have snowballs all year round. Made of sponge cake, cream, pineapple, and coconut flakes … yummy!

When the first snowflakes fall from the sky outside, we really get a craving for snowballs. Snowballs to eat, of course! But no matter whether it’s summer or winter, this treat is delicious all year round. Here’s the recipe to try out so the time until your next family holiday at our Dolomites hotel really flies by.

Ingredients:

4 eggs
4 tablespoons of warm water
150g sugar
1 packet of vanilla sugar
100g flour
100g corn starch
2 teaspoons of baking powder
500g whipped cream
4 slices of pineapple (tinned)
Coconut flakes

Method:

Beat the eggs in a bowl, add the water, and stir until the mixture is foamy. Then slowly add the sugar and keep stirring. Mix the flour, corn starch, and baking powder together. Sift this mixture into the bowl with the egg mixture. Then gently fold in the flour mixture until you have a consistent batter. Put baking paper on the baking tray and spread the dough on it. Bake at 175 degrees for about 15 minutes.

In the meantime, drain the pineapple slices and let the excess moisture dry up. Then cut into small cubes. Crumble the cooled sponge cake base into small pieces, place in a bowl and mix well with the pineapple pieces. Whip the cream into stiff peaks and fold into the sponge mixture. Leave to rest in the fridge for at least 30 minutes. Then form small balls, roll them in coconut flakes, and place in the fridge to harden (waiting is the hard part!). Now, the delicious snowballs are ready.
