Recipe for traditional South Tyrolean apple strudel

What’s the best way to enjoy apples? In a traditional apple strudel, of course. We are going to give you the recipe for the perfect South Tyrolean strudel. Take notes!

For the ultimate South Tyrolean experience, here’s the recipe of our most famous dessert: apple strudel!

Mix 125g butter (at room temperature) with 125g sugar, the grated zest of a lemon, and half a packet of bourbon vanilla sugar until smooth. Add a tbsp of milk, the egg, 250g flour, and a tbsp of baking powder and mix into a dough. Wrap in cling film and leave to rest in the fridge. In the meantime, wash and peel five juicy South Tyrolean apples. Cut into fine slices and mix well with 50g biscuits or breadcrumbs, 40g raisins, 20g pine nuts, 50g sugar, some lemon juice, and lemon zest. Depending on your taste, you can also add cinnamon or rum to the filling. Then take the dough out of the fridge, knead again briefly, and roll out (about 3mm thick). Place the apple filling in the centre, fold the sides in, and then roll the pastry over the filling. Bake the strudel in a preheated oven at 180 degrees for about 35 minutes.
