The cuisine of South Tyrol: a delight for kids too

A family holiday in South Tyrol means not only enjoying the magnificent mountains and a delightful natural world: the cooking of our homeland is famed far beyond its borders, particularly when the lightness of Italian cuisine is blended with the heartier local style.
To get you and your family into the right mood for your next holiday in South Tyrol, and because we know how much children like to help out with cooking and baking, here is a delicious recipe for you to try at home.
 
Original South Tyrolean apricot dumplings

For 16 dumplings

For the dough:
•400 g potatoes, cooked
•175 g flour
•50 g butter
•5 tbsp semolina
•3 eggs
•1 pinch of salt

To prepare:
•16 apricots
•16 tsp sugar
•75 g butter
•50 g breadcrumbs
•1 tsp cinnamon
•sugar
•butter (browned)

Preparation

Mash the still-warm cooked potatoes and then knead together with the flour, butter, semolina, eggs and salt – a special treat for the kids. Stone the apricots and fill each one with a teaspoonful of sugar (you can leave out the sugar if you prefer and leave the stones in the apricots – kids love to count them after the meal to see who has eaten the most dumplings!). Wrap the apricots in the potato dough, place them in boiling salted water and simmer for 5-7 minutes. In the meantime combine the sugar, cinnamon and breadcrumbs, then coat the cooked dumplings with the mixture. Pour over the brown butter and they are ready to enjoy!
