Our favourite recipe in February

Radicchio risotto!

Are you always on the lookout for seasonal recipes? Our tip for winter: radicchio!

Radicchio is a member of the chicory family and is often used in salads. What many people don’t know is that it also tastes delicious fried or boiled. During the winter months, we often use it to prepare risotto.

Here’s what you’ll need for 4 portions:
240g short-grain rice
200g radicchio
50g streaky bacon
50g onion
1 clove of garlic
Red wine for deglazing
1 litre water or broth
Salt, pepper, Parmesan

Here’s how to make it:
Peel the onions and garlic, chop them up, and sauté them in oil. Add the finely chopped streaky bacon. Add the chopped radicchio and sauté it together with the other ingredients. Then add the red wine to deglaze and leave it to simmer until the wine has almost completely boiled down. Add the rice and then gradually add the water or broth. Season the risotto with salt and pepper and continue to cook for approx. 20 minutes (depending on the type of rice), stirring continually, until it reaches a creamy consistency. Add a little Parmesan to taste.
